WHere is an easy take on a drink from our latest drinks list. This is a party-sized pre-mixed which is packed full of tastes of a festive period, rendering it excellent for a festive gathering. Any leftover citrus syrup you can use for morning drinks, sweets, or to make additional servings of bikinis.
The Bikini Cocktail
Makes enough for 10 guests
For the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Premix (makes 850ml, serving 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Directions
Making the Cordial: Combine all the items into a saucepan, bring to a light boil, agitating so the sugar melts. After that, remove from the heat and let it to cool down completely. Pour into a sterilised bottle, seal and refrigerate it chilled, it will last for about one month.
For the Batch Mix: Combine all the spirits and syrup into a sizeable container, allow it to infuse for 60 minutes, then pass it through preferably using cheesecloth, making it perfectly clear.
For serving: Pour 85ml from the cocktail base to a stirring glass packed with ice, and stir lightly for a minute to chill. Strain to a frosted cocktail glass or equivalent, decorate with some cranberries and finish by giving it a light spray of mandarin oil above the glass.
